I have this same smoker except with the remote control / probe, and let me tell you it’s awesome, turns any dunce into a pit master! Beautiful results. Coat shoulder (Boston butt) in mustard then cover with plenty of dry rub, wrap tight, marinate overnight, smoke at 225f never opening door, only add wood chips first…
