Depends on the meat or the acid you use. Orange juice does wonderful things to skin on chicken or fish.

I have always been a 1/3 cup vinegar, 1/4 cup soy sauce, 1/4 cup lemon (or orange if I am using this on chicken) juice, 4 table spoons of salt and 2 cups of water for my base. Then I add whatever extras I want to that to make the flavor of the day.
