I've read a few places (thekitchn.com and America's Test Kitchen) where they suggested 1) heating the chickpeas for about 30-60 seconds in the microwave before processing, and 2) process the chickpeas before adding any liquid.

Just make sure you don't accidentally turn them into risotto.
