This is very true of stir fries, where you flavor the oil with your aromatics and then cook in the aromatic oil. But typically the cooking time is short with lots of movement so you don’t end up with a pile of burnt garlic.

In my area (so cal) most of the hispanic markets sell fresh tortilla chips that are slightly puffy and flaky, while the restaurants all serve the typical thin tortilla chips. The fresh ones are amazing, but also much more salty and greasy than the normal ones (go figure salt and fat taste better).
