Have you checked http://cheese.joyousliving.com/Default.aspx ? Being that you are a vegetarian, I know you're likely more aware of sites like that than I would be (as a flexitarian, of sorts) but it can't hurt to share the knowledge. :)

So, there's also plant based rennet, which is what I use when making cheese. Absolutely fine for fresher cheeses. Some people say you can detect a bitterness that isn't present with animal rennet for aged cheeses, but I tend to stick with mozz, feta, paneer, farmers cheeses, etc. so it's not come up for me yet.
