Biggest reason is I don't know if I'm in their phone or not if it's someone I don't call them often enough to have them add me to their phone. I leave a voicemail to let them know yes, I'm purposefully calling you and not a telemarketer or similar.

There's also scientific evidence supporting whoever draws first, actually draws slower from holster to firing, then if you drew second.

I think fax machines will still be around for a while. My understanding it's safer than electronically sending the same sensative information since it's on two land-lines. (At least, that's what work tells me)
