It depends on where you are. For example, the dorms at my university all use 10/100 Mbps PoE switches. So regardless of the internet connection, the hardware will only support up to 100 Mbps. That may be the case for you too.

You don't replace the router, you just add yours to it and turn off the wireless on the FiOS router. For most scenarios having the FiOS router control DHCP and port forwarding while having your router as an access point works fine.

There can be several reasons. My guess is a DNS issue.

Regardless of internet service providers, services like YouTube will always suffer. It is Google's end. Even with my Gigabit connection at my University, YouTube still sucks.

You have to wire each of your STBs to a switch (or your Verizon FiOS router) and then run Ethernet from your ONT outside to your FiOS router. Then you call Verizon and ask them to switch you from MoCA (Multimedia over Coax Alliance) to Ethernet.
