I'm not going to comment on all your thoughts because that would take a very long time. Thing is, I totally agree w/each and every one of them, especially your first:

Absolutely. Our government is held hostage to corporate interests so school meals are designed more around schools being consumers of processed foods/holding down labor costs than designing meals (and curricula) around children's needs.
