The great thing with the greek/skyr/strained style yogurts is that they are less runny. This makes them really easy to substitute for things like mayonnaise, sour cream, crema, etc. They are fantastic in salad dressings, and subbed for mayonnaise in things like tuna or egg salad. I really liked that she was upfront about what she was doing and that she needed it.
