Until I saw your post I hadn’t even thought about this aspect too: subs aren’t exactly stable platforms on the surface, so how and where he did so is a legitimate (albeit gruesome) question.

Coriander. Hard to imagine cooking chicken by itself without it for me nowadays, especially sous vide.

Yep, although if I remember right decomp can involve stuff that somewhat offsets lower temps as long as you’re not getting close to freezing.
