I think most EV’s have an eco driving option which does just that.  And a sport mode which let’s you go full torque.

I find that I rarely use the actual brakes. Regen brakes on the Niro EV are pretty great and with additional manual controls it does bring the car to a near full stop.

I have a Niro EV. The front wheel drive isn’t nearly as bad as you might think. Yes it occasionally spins when I accelerate quickly from standstill, but I’m not that annoyed by it. Would I prefer RWD? Sure, but for my requirements there weren’t other options.
