Labor being about 50% of a project is about right, though. Contractors rarely cut on labor, it will be the materials that they’ll low ball.
Also, if it’s primarily indoor work, see about doing it during the winter. Contractors are less busy so they’re looking for jobs to keep their crews busy so you’ll probably get a good rate on labor and a less distracted GC.
I’m not sure you need an architect for that, just a clear idea of what you want the end result to be. Writing everything down and giving the package to each contractor you want a bid from is a good idea though.
