I haven't done any professional wheel-to-wheel racing, but I have done track days. The rules there usually say to drive predictably and hold your line - it's the responsibility of the faster driver to perform a clean pass. If you cannot perform a clean pass, do not perform a pass.

People love to point out that Polyphony Digital did the cluster, but they never mention that UI is consistently the worst thing about the Gran Turismo series.
