What I’m not getting though is that how come Kipo who’s said to be human have pink/magenta skin while every other human looks normal?

Well technically ‘yes’ but Ian DID say he was able to tell the story he wanted to tell, so if this DID get a new season past its planned ending like Steven Universe did he would have to start a brand new story arc entirely.
