Gillen's acting doesn't really help. The perpetual smirk is really off-putting, especially when he's "apologizing".

I'm pretty sure a LOT of people cared, and still care, about the Sansa rape. It's even mentioned in this review. And the Cersei one you didn't mention, but I guess it's just because you didn't like her as a character (since we're all just assuming things about each other).

To be fair, that doesn't necessarily mean it won't be important in the books. If every single thing the show skipped isn't important, stuff like Quentyn and all the long, detailed lists of food items aren't going to effect the plot in anyway. And that just can't be true.
