There’s nothing wrong with asking for an extra credit assignment. The student could have missed a class where something was taught and they didn’t have a chance to learn it for the test (not always the student’s fault). There’s a ton of reasons why extra credit is available.
I am a super picky eater. It’s not that I want to be a picky eater (or PITA), but most food I don’t like tastes AWFUL and/or has disgusting texture. Sorry but it’s usually not people being assholes, everyone’s taste buds are different :)

I have worked retail and it’s still a policy issue. If you don’t want your cashiers to have that much change, then don’t accept or give change for large bills. If you choose to accept them, you need to have a system in place to provide adequate change in a timely manner.
It’s not naive, it’s efficient. If you are worried about theft, then don’t accept or give change for large bills.
I’m aware of all of those things. If those are the policies in the store, then a manager needs to be readily available to assist the cashiers. If a large amount of change is not in the till (timed safe, etc), then large bills should not be accepted.
