I always do a minimum 2 weeks primary, 2 weeks secondary (If dry hopping I transfer but I have also left in primary the entire time and haven’t noticed any off flavors) and then bottle. How big is the sous vide machine thingy though? A 5 gallon mash would have approx 3 gallons of water plus the water needed to sous vide with. I have a 10 gallon cooler and while it is not perfect it seems to do pretty good at keeping grain at the correct temp.
