I would suggest that it takes distilleries waaaay longer to produce quality product, for obvious reasons. I’m lucky to have a couple of decent microdistilleries in my state, but I generally agree wholeheartedly.
First Call is kinda meh to me. Banshee Cutter (Insight) and Roasted (Burning Brothers) are far superior IMO.

I think that version of “out there,” somewhat interestingly, is an attempt to appeal to non - beer drinkers, which I can get down with to a point.
Sisyphus does some good stuff now, but when they first opened, it was rough. Still surprised they outright cheated like that, though.
I haven’t either, but from what I have heard, I don’t think I could. The idea of buying local beers to cellar for the purpose of doing anything other than drinking them...just seems wrong to me, even if I know they are currency for new beers.
I think I’ve had maybe two pilsners that were any good from any brewery ever. I know that’s likely because my palette needs stronger flavor to really get anything going, but there we are. A lighter touch is occasionally nice, but I generally require bold flavors.
