Depends on how you sharpen your knives. If you use one of those preset, ceramic knife sharpeners that you just drag the blade though, then all your knives will have the same angle.

This completely depends. In terms of steel quality, there's no difference between the western manufacturers, but balance, handle material, and feel all change from brand to brand. And if you want a knife that'll hold an edge without honing it every few uses, you'll need better steel.
