Ford’s allowed to be ‘reactionary’ occasionally, since GM and Chrysler have been ‘reacting’ to them ever since the Mustang in ‘64. I still can’t believe Mulally green-lighted the Raptor when GM and Chrysler were being saved by the taxpayer and Ford was floating near bankruptcy (I wish he would unretire to Ford again).
Yep, but I think you’d want more low-end grunt in a truck. The Coyote in my Mustang doesn’t really start pulling until about 3,500RPM (maybe the 10-speed auto is geared so as to compensate?).

I have a ‘19 Bullitt with a Gen 3 Coyote. The engine doesn’t have a lot of low-end grunt (but does pull mightily all the way to 7.4K redline). I think you’d want a boosted 6 or 8 in an off-roader.

People will bitch, but pay what they have to for gas. They won’t trade in their Expeditions and Navigators for Fiestas, but they may drive less if they can and will cut corners elsewhere—insurance, entertainment, etc.—assuming gas will come back down eventually. The only significant change will come if gas goes north…
