I would never use grated tomatoes like this as a sauce (the consistancy is not quite right) BUT grated tomato is perfect for my favourite Spanish breakfast tostada con tomate. Topped with flakey sea salt and some fancy olive oil this is simply delicious. Beef tomatoes are especially well suited for this quick snack.
