Customers actually pay 100% of most servers salaries, but it’s 20% of the bill (which also includes kitchen/other labor, food costs, rent, etc). Servers often get a “paycheck” for $0 from their boss.

15% used to be the standard. I’m not sure when, but sometime in the last 10 years of so, 20% became the standard. So you’ll still see some people scoffing when someone gives a 15% tip and you’ll hear some people adamantly defending the 15% tip.

Don’t beat yourself up too much- you know now, for next time you’re in the US.
