Let's assume that it does get wrapped up in two more books. By % of time spent, the big bad guy of the series is "human nature." Which is fine, but makes the WW even more of a MacGuffin.

In the show's defense, the White Walkers are more present in the show than in the books IMHO. I think it is mostly just that Arya's training has appeared so ineffectual in the show. It's like Jaqen can't tell the difference between "broken" (or brainwashed) and "knows the right thing to say to get eyes back".

I agree, a lot of these character odds seem like they need to be sweetened. This week is better than most in that regard. The Mountain / The Hound odds seem to be based on a foregone conclusion that CleganeBowl is happening this week, which there has been no sign of.

Nope, actually they are aligned with the Starks. It is more that you have the Vale, the Freys, the Lannisters, and Brienne of Tarth converging on the Riverlands.
