Subler is a good remuxing app for Mac. I use it all the time to quickly remux my MKVs into MP4s and 6 channel ac3 into 6 channel aac.

What phone do you have that can properly playback 720p MKV files? And what player are you using to accomplish this?

You realize AC3 audio is dolby digital right? It can be 5.1 or 2 channel.

This has to do with basics of OS X. The OS treats each icon on your desktop as an open finder window. To many icons, finder slows down, so does you're whole system.

If you have a non-unibody Macbook Pro with dedicated graphics, you should be fine for Mountain Lion. It's intel Macs with integrated graphics that predate the 9400m that are left behind.
