Subler is a good remuxing app for Mac. I use it all the time to quickly remux my MKVs into MP4s and 6 channel ac3 into 6 channel aac.

If you have a non-unibody Macbook Pro with dedicated graphics, you should be fine for Mountain Lion. It's intel Macs with integrated graphics that predate the 9400m that are left behind.

Because the system restore is still part of the single HDD/SSD so if you're having problems with the drive, you don't exactly want to boot the recovery partition from the same drive. It's much safer to boot it from an external source.
