In Texas there is a large market for the hides of longhorn cattle, which are raised on ranches. I think that is a good way to go, too. It uses all parts of the animal and is profitable, so farmers are willing to make the choice to raise those cattle over angus, or whatever.
As a meat-eater, I am cool with leather and other things that come from the animals people typically eat. But I would never wear a fur made of mink, for example. If you can't eat it, don't be taking its skin!
