Funnily enough one of my old uni friends recently set up a Mexican and Spanish cuisine restaurant in Melbourne. Seems to be going well for him there. Before that he ran a few other different restaurants each with their own cuisines. From what I can tell it's quite fickle there and fad driven.

They're wrong, or fanatics. The two most sought after cuisines in the world are Chinese and Italian. Third is Japanese. According to the stats I have there are more Greek and Cypriot restaurants than Mexican. I guess it's not actually that popular?

But people have thought about making them. The only person that deserves a medal in the TAS community is the first person who came up with TAS, because that's quite a leftfield idea.
