The fish is coated with black pepper and a couple other spices and served with salt and wasabi. Soy sauce is of course recommended.

Thanks for publishing my photo Brian! This was taken at a restaurant called Warayaki-ya in Shinagawa. Their speciality is katsuo, which is skewered and cooked over straw. It gives a smokey flavor on the outside while keeping the inside mostly uncooked. And it’s quite a spectacle, as you can see in the picture above.
