Asami's big emotional arc at the end of the season is entirely about coming to grips with her dad, and Korra doesn't factor much into any of it. I'd read a summary of season 2, just so you understand the frame of what's going on, but a reasonably non-obsessive person could definitely get by without even that much exposure.
I was similar to you until earlier this year. Season 1 ended on an uneven keel, so I was at half-mast only for season 2. Fell out of it halfway through and didn't feel like catching up until after the series finale.

In general, I thought LoK was a great example of creators being given too much leeway. ATLA had a better variety or writers to balance things out.
