You're absolutely correct. It is still possible for you to upgrade to 5.0.1 and get the mirroring goodness, though, as the jailbreak process requires you to provide the IPSW (update file). My main reason to jailbreak is so I could stream things NOT on my iTunes to my computer. I don't think I could ever use an ATV without it.

If they release an App marketplace I'd imagine so, although Google would be quick to release their own. If not, it would be silly of Apple to remove that functionality.
