You do realize the volume difference isn’t from evaporation differences, it’s mostly because the noodles absorb water. So technically you used too much water for the spices. That also explains some of the coloring difference. To be a real test you would need to match volume.

Get some true lemon packets. They taste exactly like a lemon way better then lemon juice bottles. Should be able to find them in a supermarket and amazon has them.

You also need to check for loss of use. Some states allow rental companies to charge you for days of rental while it’s being repaired. This is not covered by a lot of policies.
