Adams actually said in interviews that he was disappointed in how this story was realized- that everyone got the idea "Oh, this is a comedy, we've all got to wheel out the funny voices and silly walks." It's not entirely unsuccessful but I think playing it straight would have helped the actual humor stand out a little…
You're forgetting the power disparity here. She could have quit then and there, sure. And forfeited money that she may have needed. That pressure is always there in conflicts between labor and management, which is why it is usually best to side with the former.
