The Unsullied's mission wasn't to defend themselves, it was to keep the peace, Which, since they're not being well led for the purpose, makes them very easy to lead into ambushes.
My pet theory is that they're out of work gladiators, possibly in league with The Lorax, who was meeting with Dany right as they arrived.
