Power consumtion. Desktop 6850 uses 150 Watts. Laptop 6970M uses 70 Watts. Considering the form factor of the iMac, you can't really fit in a high end power supply. And they wouldn't have that page about having the most energy efficient computers ever if their graphics ate 200 Watts.
