I have found that sweet potato pasta works great for asian inspired dishes. I don’t really worry about the protein in these, since some other form of protein is going into the dish (chicken, shrimp, egg, or pork). 

Oddly enough, I find that an issue with regular GF pasta’s
(like Barilla) than I do the protein enriched ones. Maybe it is the pasta. Maybe it is that I tend to watch the protein enriched ones more closely. 

I live with someone who has celiac. Experience tells me that you were cooking these pasta’s like you would a regular wheat pasta - you can’t. Follow the instructions on the package exactly, and be aware that it onl takes seconds to go from perfectly al dente to gummy.
