It's most likely a venomous snake that bit him, if not then a bite that got seriously infected. This pic would have been after all the infected/necrotic tissue was removed.

You're correct, this was definitely the result of cleaning up necrotic tissue from a venomous bite. Every snake I've ever heard of swallows and digests, they don't bite off chunks and chew. The initial wound for this was likely a couple fang punctures.
