They usually record for a set amount of hours and automatically record over old footage as to be able to continually capture driving.
The darkest part of the checkerboard's levels measures the same by the camera as the lightest part. The lighting is used to control the levels of gray to make sure the camera sees each square the same. It's real life but we still see it in 2d on video anyway. Cool illusion.
