If they’re that harmful to you, you should always ask if there’s mushrooms in what you intend to order. Even if they’re not listed, and even if you wouldn’t expect that dish to have them. Yeah it’s a pain to do that every time but if there’s mushrooms in it, you won’t have to burst into tears when it arrives.

If it always comes out overcooked then it sounds like you’re the problem not the restaurants. Just order one rung rarer than you normally do unless you’re already ordering rare in which case you’re some kind of raw meat weirdo.
