Not true, some very nice crock pots are made to safely use in this way. They are built tough enough to easily withstand the heat of a burner. Not all, but you can find them easily if you look.

Any opinion on concrete counter tops? I'm not a fan of the glitz of granite. I would want something more simple.

I use my slow cooker a lot, and am a good cook in all mediums. But I tried the lasagna thing once and it turned out horrible!! The first dish I've completely ruined in a decade.. :( What's the secret? Mine came out burned on the bottom, mushy and the texture of the ricotta was just gross.

I just wanted to add a quick note here... Some (not all, check the instructions) slow cookers have that inner vessel that you can remove and put on your stove. This is great for browning your meat before you start the slow cooking process and doesn't totally negate the time saving/one pot aspect of using the slow

Yeah, I've always done it with stock and herb butters. Just never occurred to me to do the water+herb combo. It's a great tip!
