Rice and beans is my go-to. I start a small pot of rice (Latin style, with salt), and while it’s cooking I simmer a can or two of black beans with several tablespoons of recaíto in another small pot. I’m even training my kids to recognize rice cooking at various stages, so they can take over for me.
