The story is bigger than a single episode. A bad thing happened and then we moved on to something awesome, but that tone and that event will still be there when we come back to Stannis and the north.

I kind of feel like they had to put her death in the middle of the episode. If the episode had ended with her dying I would have considered ending my viewership of GOT. That was an incredibly tough scene to watch and I needed something even a little more upbeat after that.
