The last game where I ran into that issue was the Crash Team Racing remake where the default difficulty was somehow "the hard unlockable Mario Kart cc", but the easy difficulty, the AI was basically non-existent.

Reminds me of needing a break playing the underwater stage in the Reignited version of Spyro 2, with the entire level being submerged underwater and most of the stage in a cramped, ceiling-capped area, which definitely gave me a little “trapped underwater” heebie-jeebies.
