I became aware of this about a year ago when I was baking something and didn't know how to figure out if my eggs were off (and was feeling far too lazy to make a trip to the store). I'm amazed at how much longer eggs will last beyond the 'expiration' date stamped on the carton. I've bought, and wasted, far fewer eggs…
