Jailbreaking your phone and installing SBSettings would do that. That's the prime reason I jailbreak. It's a drop down from the status bar, available even from the lock screen, and toggles data, airplane, 3G, Bluetooth, Wifi, SMS alerts, brightness, and a whole lot of other things that you can download from Cydia.
