'Create a new character' presumably means 'create an ongoing character'. Just having a one-off character be gay, while fine, isn't creating a character on par with having one of the main crew who shows up in every movie be gay.

The thing to me is that the characters are already changed considerably. I can't, for example, imagine Leonard Nimoy's Pissed-Off Spock wailing on Khan on top of a garbage barge or hunkering down to make it with Uhura.
