I caught exactly 2 episodes of Season 1, but have been watching religiously (*cough*) since the Season 2 premiere. I do want to go back and watch the earlier eps, but I don't think I've missed anything essential. It's not like Lost or Doctor Who.

People started watching it in the expectation that it would go down in flames (see what I did there), but then they actually liked some elements, and some casting and the eps started to get stronger, and people began bona fide rooting for it.
