The answer is incredibly boring… she had a kid. She's at home raising the kid and is being more chosey with her projects. She's putting more time and effort into Jane Got a Gun because it's her project and not something she signed onto for money. So… yeah.

Untold had already finished shooting before the plans for the Universal Monster Universe (UMU?) were finalized and put into action. Apparently they tweaked it in post to make a loose connection to the overarching storyline, but it won't be "canon." Just like Marvel with the previous Hulk movies.
