I seem to recall she had a pretty jaundiced reaction when Sam pulled up at the housewarming party for the Martinis.  I suspect she knew his game from the beginning, George or no George, which either discredits your premise or makes her decline all the more tragic.

It's pretty clear in the film that Sam cats around and isn't really interested in Mary except perhaps as a conquest, Mary's mother notwithstanding.  I seem to recall that Sam's got three women in his office when he calls Mary, and Sam doesn't seem to give a whit that George is in Mary's house and on the phone*, indeed…
