This is a tough call.  Both excellent.  Just watched TotSM the other day.  Bogart's slide into psychosis is excellent, but the scene stealer might be Walter Huston.  His verbal take-down of Bogart and Tim Holt when he points out the gold, topped with a little jig, is one of my favorite moments in any movie.

Agree, though Bogart's tough-guy affectation was just a tad over the top.  Look at the way he holds his arms.  Weird.

storytime!  x-mas break from my freshman year of college in 1985 we took a family trip to see the grandparents in Phoenix. Borrowed the car to scour a few local record shops as was my wont in them days. Flipping thru the bins I was amazed to find this live Minutemen album I'd never seen before ("Just a Minute Men").
