Usually what's going on is that they take a survey of people's health and their habits, and then they report the correlations between behavior.

1) Wizards don't need math beyond a 5th grade level (if that); they have magic, and if they wish to study math any further, they can take Arithmancy. That's why the conversions between Knuts, Sickles, and Galleons are so cumbersome; it didn't occur to wizards to make a base 10 (or other convenient counting method)…
They grow, like mold. Also, as non-beings, they don't really "die", as they aren't alive.
At the professional level, the Chasers are more than fast enough to gain the majority of the points, especially considering the efforts taken by the Beaters and the opposing Seeker to keep the Snitch from being caught. We saw this in Book 4 and in the 2014 Quidditch World cup.
