Isn't a pressure cooker sort of a short cut in the kitchen, especially for longer cooking methods like braising?  Since chefs usually aren't under the time constraints that they are in this competition, I can see them holding the conceit that the longer method yields better results (don't know if that's true or not).

I've been thinking pickled fruits is this seasons scallops. Pressure cooker is the new sous vide. Or old?
